Southern Twang Vegetarian Platter
Main course or side dish, this ensemble of vegetables will make your mouth water and your mama proud.
Ingredients
1/4 cup Olive Oil
2 cloves garlic minced
Pinch of salt & pepper
2 yellow squash
2 zucchini
2 medium yellow onions
3 portobello mushrooms
1 cup Southern Twang sauce
Prepare: Pour the Olive oil into a bowl and add minced garlic, salt and pepper. Cut the ends off the yellow squash and zucchini and slice lengthwise into wedges. Slice the onions to form rings, and slice the portobello mushrooms. Brush the vegetables with the oil dressing to coat so that they don't stick to the grill.
Grill: Grill the vegetables until done.
Heat: Heat Southern Twang sauce. Bring it to a boil to make sure it's nice and hot. The hotter the sauce the spicier it tastes.
Serve: Place the cooked vegetables onto a platter and drizzle with Southern Twang sauce.
This makes an attractive, healthy dish that will keep them coming back for more. Any vegetables will taste great. Other favorites are peppers and asparagus.
